Description

A comforting and easy chili recipe that is perfect for weeknight dinners.


Ingredients

  • 1 pound of ground beef or chicken
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 ounces) of diced tomatoes
  • 1 can (15 ounces) of kidney beans, drained and rinsed
  • 1 can (15 ounces) of corn, drained
  • 2 cups of chicken or vegetable broth
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish


Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Stir in the minced garlic and diced bell pepper. Cook for another 2-3 minutes.
  3. Add the ground beef or chicken to the pot. Cook until browned, breaking it apart with a spoon.
  4. Once cooked, drain any excess fat.
  5. Add the diced tomatoes, kidney beans, corn, and broth to the pot. Stir to combine.
  6. Season with chili powder, cumin, salt, and pepper. Mix well.
  7. Bring the mixture to a boil. Lower the heat, cover, and let it simmer for 20 to 25 minutes.
  8. After simmering, taste and adjust seasonings if necessary.
  9. Serve hot, garnished with fresh cilantro or parsley.

Notes

Feel free to switch the ground meat to turkey or use a mix of beans for a vegetarian version. Add jalapeño or cayenne pepper for extra heat.
