Description
A comforting and easy chili recipe that is perfect for weeknight dinners.
Ingredients
- 1 pound of ground beef or chicken
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can (15 ounces) of diced tomatoes
- 1 can (15 ounces) of kidney beans, drained and rinsed
- 1 can (15 ounces) of corn, drained
- 2 cups of chicken or vegetable broth
- 2 teaspoons of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Stir in the minced garlic and diced bell pepper. Cook for another 2-3 minutes.
- Add the ground beef or chicken to the pot. Cook until browned, breaking it apart with a spoon.
- Once cooked, drain any excess fat.
- Add the diced tomatoes, kidney beans, corn, and broth to the pot. Stir to combine.
- Season with chili powder, cumin, salt, and pepper. Mix well.
- Bring the mixture to a boil. Lower the heat, cover, and let it simmer for 20 to 25 minutes.
- After simmering, taste and adjust seasonings if necessary.
- Serve hot, garnished with fresh cilantro or parsley.
Notes
Feel free to switch the ground meat to turkey or use a mix of beans for a vegetarian version. Add jalapeño or cayenne pepper for extra heat.
