Description

Creamy brie pasta combines the richness of melted brie with garlic, herbs, and tender pasta. This easy yet elegant dish delivers big flavor using minimal ingredients.


Ingredients

  • 12 oz pasta (fettuccine, linguine, or penne)
  • 8 oz brie cheese, rind trimmed and cubed
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or unsalted butter
  • 1/3 cup reserved pasta water
  • Salt and pepper to taste
  • Optional: lemon zest, fresh basil, spinach, cherry tomatoes


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/3 cup of the pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute until fragrant.
  3. Add drained pasta to the skillet. Turn off the heat.
  4. Add cubed brie to the hot pasta.
  5. Pour in reserved pasta water slowly, stirring until brie melts and forms a smooth sauce.
  6. Season with salt, pepper, and optional lemon zest. Add fresh herbs or vegetables if desired.
  7. Serve immediately with a garnish of basil or grated Parmesan.

  • Trim the brie rind for a smoother sauce.
  • Add proteins like grilled chicken, pancetta, or shrimp for variety.
  • Reheat gently with a splash of milk or water to keep the sauce creamy.
