Ingredients
- 12 oz pasta (fettuccine, linguine, or penne)
- 8 oz brie cheese, rind trimmed and cubed
- 2 cloves garlic, minced
- 2 tbsp olive oil or unsalted butter
- 1/3 cup reserved pasta water
- Salt and pepper to taste
- Optional: lemon zest, fresh basil, spinach, cherry tomatoes
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/3 cup of the pasta water, then drain.
- In a skillet, heat olive oil over medium heat. Sauté garlic for 1 minute until fragrant.
- Add drained pasta to the skillet. Turn off the heat.
- Add cubed brie to the hot pasta.
- Pour in reserved pasta water slowly, stirring until brie melts and forms a smooth sauce.
- Season with salt, pepper, and optional lemon zest. Add fresh herbs or vegetables if desired.
- Serve immediately with a garnish of basil or grated Parmesan.
