Description

A comforting and easy-to-make breakfast casserole with layers of sausage, fluffy eggs, and melty cheese, perfect for busy mornings.


Ingredients

  • 1 pound Breakfast Sausage (can substitute with bacon or diced ham)
  • 8 large Eggs (beaten until smooth)
  • 2 cups Milk (almond milk can be used as an alternative)
  • 1 cup Sour Cream (Greek yogurt can substitute)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 3 cups Hash Browns (frozen or fresh)
  • 2 cups Cheddar Cheese (mixing in mozzarella can enhance creaminess)
  • 1/2 cup Green Onions (chopped for garnish)
  • 2 cups Fresh Fruit Salad (a refreshing complement)
  • 1 dozen Cinnamon Rolls (for a sweet addition to brunch)


Instructions

  1. Cook the Sausage: Heat a skillet over medium heat. Add the breakfast sausage and cook until it is brown and crispy. Drain excess grease.
  2. Prepare the Egg Mixture: In a large bowl, beat the eggs. Stir in milk, sour cream, salt, and pepper. Mix well until everything is combined smoothly.
  3. Layer the Casserole: Place the hash browns in a greased baking dish. Add the cooked sausage evenly over the hash browns and pour the egg mixture over the sausage and hash browns.
  4. Add the Cheese: Sprinkle cheddar cheese across the top of the mixture. You can mix mozzarella for a creamier texture.
  5. Cover and Refrigerate: Cover the dish tightly with plastic wrap or foil and put it in the refrigerator overnight.
  6. Bake in the Morning: Preheat the oven to 350°F (175°C). Remove the cover from the dish and bake for 45 to 55 minutes until the casserole is set in the middle and the top is golden brown.
  7. Garnish and Serve: Let it cool for a few minutes. Sprinkle chopped green onions for garnish, cut into squares, and serve hot.

Notes

For a vegetarian version, skip the sausage and add more vegetables. You can experiment with different cheeses for varied flavors.
