A filling breakfast casserole combining eggs, meats, and vegetables, perfect for make-ahead meals.
Ingredients
- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cups cooked and crumbled breakfast sausage or bacon
- 2 cups shredded cheese (cheddar or your choice)
- 4 cups cubed stale bread
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the bell peppers, onions, cooked sausage or bacon, and half of the cheese.
- Add the cubed bread to the mixture and gently fold until evenly combined.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes or until the center is set and the top is golden.
- Let it cool for a few minutes before slicing and serving.
Notes
For a vegetarian option, exclude meat or use alternatives. Let the casserole sit for a few minutes before slicing for best results.
