Ingredients
- 2 cups cooked quinoa or rice
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- Fresh parsley, chopped
- Salt and pepper to taste
- Olive oil
- Lemon juice
For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a large bowl, combine the cooked quinoa or rice with diced chicken, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
- Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss well to combine.
- To make the tzatziki sauce, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
- Serve the Greek chicken mixture in bowls, topped with tzatziki sauce.
Notes
Store leftovers in airtight containers in the fridge for 3 to 4 days. For longer storage, freeze and reheat as needed.
