Description

A colorful and hearty Greek chicken bowl featuring fresh ingredients, grilled chicken, and a tangy tzatziki sauce, perfect for busy weeknights or meal prep.


Ingredients

  • 2 cups cooked quinoa or rice
  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil
  • Lemon juice

For Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt to taste


Instructions

  1. In a large bowl, combine the cooked quinoa or rice with diced chicken, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss well to combine.
  3. To make the tzatziki sauce, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
  4. Serve the Greek chicken mixture in bowls, topped with tzatziki sauce.

Notes

Store leftovers in airtight containers in the fridge for 3 to 4 days. For longer storage, freeze and reheat as needed.
