A guilt-free version of the classic churro, these healthy baked churro bites are light, airy, and delicious, making them perfect for a snack or dessert.
Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup erythritol or preferred sweetener
- 1 tbsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 tsp vanilla extract
- Melted coconut oil (for brushing)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together almond flour, coconut flour, erythritol, cinnamon, baking powder, and salt.
- In another bowl, combine applesauce, almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Roll the dough into small bite-sized balls and place them on the baking sheet.
- Brush the tops with melted coconut oil and sprinkle with additional cinnamon and erythritol if desired.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool before serving.
Notes
These churro bites can be served warm or at room temperature. Pair with a healthy dipping sauce for an extra treat.
