Description

A guilt-free version of the classic churro, these healthy baked churro bites are light, airy, and delicious, making them perfect for a snack or dessert.


Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup erythritol or preferred sweetener
  • 1 tbsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Melted coconut oil (for brushing)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together almond flour, coconut flour, erythritol, cinnamon, baking powder, and salt.
  3. In another bowl, combine applesauce, almond milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Roll the dough into small bite-sized balls and place them on the baking sheet.
  6. Brush the tops with melted coconut oil and sprinkle with additional cinnamon and erythritol if desired.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool before serving.

Notes
