A fresh and colorful pasta salad combining the flavors of street corn, sweet corn, creamy avocado, and crunchy vegetables for a delightful experience.
Ingredients
- 8 oz pasta (your choice)
- 2 cups corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1/4 cup feta cheese, crumbled
- 3 tbsp olive oil
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large mixing bowl, combine the cooked pasta, corn, bell pepper, red onion, cherry tomatoes, avocado, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss well to combine.
- Top with feta cheese and serve chilled.
Notes
Store leftovers in an airtight container for 3-4 days. Add fresh avocado and feta just before serving.
