A warm and hearty casserole loaded with tater tots, breakfast meats, and cheese, perfect for family breakfasts.
Ingredients
- 1 pound Breakfast Sausage (or Italian sausage)
- 1 cup Cubed Ham (or any leftover ham)
- 1 cup Bacon Crumbles (or turkey bacon)
- 6 Large Eggs
- 1 cup Milk (or half-and-half)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 32 ounces Frozen Tater Tots
- 2 cups Shredded Cheddar Cheese (or Pepper Jack, Gouda, or Colby Jack)
- 1 bunch Sliced Green Onions (or chives/parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, add the breakfast sausage over medium heat. Cook until browned and crumbly, then drain excess fat.
- Add cubed ham and bacon crumbles to the skillet, stirring to combine and heat through for 2-3 minutes.
- In a mixing bowl, beat the eggs, then add milk, salt, pepper, garlic powder, and onion powder. Mix until well combined.
- Place frozen tater tots in a greased 9×13 inch baking dish, spreading them evenly.
- Pour the meat mixture over the tater tots evenly.
- Add the egg mixture on top, ensuring coverage over tater tots and meat.
- Sprinkle shredded cheese on top, adjusting amount to taste.
- Bake for 45 to 50 minutes until eggs are set and cheese is bubbly and lightly browned.
- Let the casserole cool for 10 minutes before serving.
Notes
Customize with different meats or add vegetables like bell peppers or spinach. Allow to cool before serving for easier slicing.
