Description

A warm and hearty casserole loaded with tater tots, breakfast meats, and cheese, perfect for family breakfasts.


Ingredients

  • 1 pound Breakfast Sausage (or Italian sausage)
  • 1 cup Cubed Ham (or any leftover ham)
  • 1 cup Bacon Crumbles (or turkey bacon)
  • 6 Large Eggs
  • 1 cup Milk (or half-and-half)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 32 ounces Frozen Tater Tots
  • 2 cups Shredded Cheddar Cheese (or Pepper Jack, Gouda, or Colby Jack)
  • 1 bunch Sliced Green Onions (or chives/parsley)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, add the breakfast sausage over medium heat. Cook until browned and crumbly, then drain excess fat.
  3. Add cubed ham and bacon crumbles to the skillet, stirring to combine and heat through for 2-3 minutes.
  4. In a mixing bowl, beat the eggs, then add milk, salt, pepper, garlic powder, and onion powder. Mix until well combined.
  5. Place frozen tater tots in a greased 9×13 inch baking dish, spreading them evenly.
  6. Pour the meat mixture over the tater tots evenly.
  7. Add the egg mixture on top, ensuring coverage over tater tots and meat.
  8. Sprinkle shredded cheese on top, adjusting amount to taste.
  9. Bake for 45 to 50 minutes until eggs are set and cheese is bubbly and lightly browned.
  10. Let the casserole cool for 10 minutes before serving.

Notes

Customize with different meats or add vegetables like bell peppers or spinach. Allow to cool before serving for easier slicing.
