Description

A hearty breakfast casserole made with crispy tater tots, meats, cheese, and eggs, perfect for busy mornings.


Ingredients

  • 32 ounces Frozen Tater Tots (Extra crispy varieties recommended)
  • 1 pound Breakfast Sausage (Can substitute with Italian sausage)
  • 1 cup Diced Ham (Any cooked ham will work)
  • 1 cup Crumbled Bacon (Turkey bacon is a lighter option)
  • 2 cups Shredded Cheddar Cheese (Other cheese varieties can be used)
  • 6 large Eggs (Fresh eggs recommended)
  • 1 cup Milk (Almond or oat milk can substitute)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 cup Diced Green Onions (Can be replaced with chives or parsley)
  • 1 cup Additional Shredded Cheese (Any cheese blend can be used)
  • Optional Toppings (Serve with extra green onions, sour cream, or hot sauce)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the breakfast sausage in a skillet over medium heat until brown and fully cooked. Transfer to a plate, leaving the fat in the pan.
  3. In the same skillet, add diced ham and crumbled bacon. Cook until the bacon becomes crisp and golden.
  4. In a large baking dish, spread the frozen tater tots evenly across the bottom.
  5. Sprinkle the cooked sausage, ham, and bacon mixture over the tater tots and mix gently.
  6. In a large bowl, beat the eggs and mix with milk, salt, pepper, garlic powder, and onion powder. Whisk until well-combined.
  7. Pour the egg mixture over the tater tot mixture in the baking dish, pressing down lightly.
  8. Sprinkle two cups of shredded cheddar cheese evenly on top.
  9. Bake for about 35-40 minutes until the cheese is bubbly and everything is set.
  10. Let the casserole cool for about 10 minutes before slicing. Serve warm, garnished with diced green onions or any other choice of toppings.

Notes

Make the casserole a night before to save time in the morning. Feel free to customize with different meats or cheeses.
