Delicious bite-sized mini cheesecakes that are rich, creamy, and perfect for sharing.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Toppings of your choice (fruits, chocolate, caramel, etc.)
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed.
- Press the mixture into the bottom of a muffin tin lined with cupcake liners.
- In another bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing well.
- Add the eggs one at a time, mixing until just blended.
- Pour the cream cheese mixture over the crust in the muffin tin.
- Bake for 15-20 minutes, or until set and slightly puffed.
- Allow to cool, then refrigerate for at least 2 hours before serving.
- Top with your favorite toppings before serving.
Notes
For best results, let all ingredients reach room temperature before starting and avoid over-beating the cream cheese.
