Description

A hearty breakfast casserole featuring savory sausage, fluffy eggs, creamy cheese, and hash browns, perfect for any meal.


Ingredients

  • 1 pound breakfast sausage
  • 6 green onions, chopped (reserve some tops for garnish)
  • 1 red bell pepper, chopped
  • 10 large eggs
  • 1.25 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Tabasco sauce (optional)
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded (divided)
  • 30 ounces frozen shredded hash browns, thawed


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned. Remove from heat.
  3. In a mixing bowl, whisk together eggs, heavy cream, Dijon mustard, Tabasco sauce, salt, and black pepper.
  4. Add the cooked sausage, green onions, red bell pepper, and 1.5 cups of cheddar cheese to the egg mixture. Stir in the thawed hash browns until well combined.
  5. Grease a 9×13-inch baking dish and pour the mixture into it. Spread it evenly and top with the remaining cheddar cheese.
  6. Bake for about 60 minutes until the casserole is puffed and golden. Check with a toothpick; if it comes out clean, it’s ready.
  7. Allow to cool for 5-10 minutes before slicing. Serve warm, garnished with reserved green onion tops.
