A hearty breakfast casserole featuring savory sausage, fluffy eggs, creamy cheese, and hash browns, perfect for any meal.
Ingredients
- 1 pound breakfast sausage
- 6 green onions, chopped (reserve some tops for garnish)
- 1 red bell pepper, chopped
- 10 large eggs
- 1.25 cups heavy cream
- 1 tablespoon Dijon mustard
- 2 teaspoons Tabasco sauce (optional)
- 1.5 teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese, shredded (divided)
- 30 ounces frozen shredded hash browns, thawed
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the breakfast sausage over medium heat until browned. Remove from heat.
- In a mixing bowl, whisk together eggs, heavy cream, Dijon mustard, Tabasco sauce, salt, and black pepper.
- Add the cooked sausage, green onions, red bell pepper, and 1.5 cups of cheddar cheese to the egg mixture. Stir in the thawed hash browns until well combined.
- Grease a 9×13-inch baking dish and pour the mixture into it. Spread it evenly and top with the remaining cheddar cheese.
- Bake for about 60 minutes until the casserole is puffed and golden. Check with a toothpick; if it comes out clean, it’s ready.
- Allow to cool for 5-10 minutes before slicing. Serve warm, garnished with reserved green onion tops.
