Ingredients
½ cup oats
½ cup low-fat cottage cheese
½ cup egg whites
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
¼ cup pumpkin puree
Optional toppings: whipped cream, almond butter, banana slices, Greek yogurt
Instructions
Blend all ingredients (oats, cottage cheese, egg whites, vanilla, cinnamon, pumpkin pie spice, pumpkin puree) until smooth.
Preheat waffle maker and lightly grease with butter or cooking spray.
Pour batter into waffle maker, being careful not to overfill.
Cook until golden and crisp, about 3–5 minutes.
Remove and let cool slightly before adding toppings.
