Description

A delightful and simple baked French toast casserole made with cubed French bread and fresh blueberries, perfect for breakfast gatherings.


Ingredients

  • 1 loaf of French bread, cut into cubes
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  3. Place the cubed French bread in the baking dish and sprinkle blueberries on top.
  4. Pour the egg mixture over the bread and blueberries, ensuring that all the bread is soaked.
  5. Cover with foil and let it sit for 20-30 minutes or overnight in the refrigerator.
  6. Bake in the preheated oven for 30 minutes covered, then remove the foil and bake for an additional 15-20 minutes or until golden brown.

Notes

Use day-old bread for the best texture. Fresh bread can become too soggy. Feel free to experiment with other fruits or adjust sweetness to taste.
