A delightful and simple baked French toast casserole made with cubed French bread and fresh blueberries, perfect for breakfast gatherings.
Ingredients
- 1 loaf of French bread, cut into cubes
- 2 cups fresh blueberries
- 6 large eggs
- 2 cups milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Butter or cooking spray for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or cooking spray.
- In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
- Place the cubed French bread in the baking dish and sprinkle blueberries on top.
- Pour the egg mixture over the bread and blueberries, ensuring that all the bread is soaked.
- Cover with foil and let it sit for 20-30 minutes or overnight in the refrigerator.
- Bake in the preheated oven for 30 minutes covered, then remove the foil and bake for an additional 15-20 minutes or until golden brown.
- Allow to cool slightly before serving. Drizzle with extra maple syrup if desired.
Notes
Use day-old bread for the best texture. Fresh bread can become too soggy. Feel free to experiment with other fruits or adjust sweetness to taste.
