Description
A hearty and comforting make-ahead breakfast casserole loaded with cheese, ham, fresh vegetables, and hash browns.
Ingredients
- 1 package hash browns (thawed)
- 6 large eggs
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup diced ham (or bacon/sausage)
- 1 medium onion (chopped)
- 1 cup spinach (fresh)
- 1 cup bell peppers (diced)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the thawed hash browns and sprinkle them evenly across the bottom of a greased 9×13 inch baking dish.
- In the same bowl, crack the six large eggs and beat them well until the yolks and whites combine.
- Add the shredded cheese to the beaten eggs and mix well.
- Dice the onion, bell peppers, and the ham or meat of your choice.
- Add the chopped vegetables and diced meat into the egg and cheese mixture, including the fresh spinach, and stir until combined.
- Pour the mixture over the hash browns in the baking dish and spread it evenly.
- Place the dish in the preheated oven and bake for about 40–45 minutes until the top is golden brown and the center is firm.
- Remove from the oven and let it cool for a few minutes before cutting into squares.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze portions wrapped in plastic wrap.
