Description

A hearty and comforting make-ahead breakfast casserole loaded with cheese, ham, fresh vegetables, and hash browns.


Ingredients

  • 1 package hash browns (thawed)
  • 6 large eggs
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup diced ham (or bacon/sausage)
  • 1 medium onion (chopped)
  • 1 cup spinach (fresh)
  • 1 cup bell peppers (diced)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the thawed hash browns and sprinkle them evenly across the bottom of a greased 9×13 inch baking dish.
  3. In the same bowl, crack the six large eggs and beat them well until the yolks and whites combine.
  4. Add the shredded cheese to the beaten eggs and mix well.
  5. Dice the onion, bell peppers, and the ham or meat of your choice.
  6. Add the chopped vegetables and diced meat into the egg and cheese mixture, including the fresh spinach, and stir until combined.
  7. Pour the mixture over the hash browns in the baking dish and spread it evenly.
  8. Place the dish in the preheated oven and bake for about 40–45 minutes until the top is golden brown and the center is firm.
  9. Remove from the oven and let it cool for a few minutes before cutting into squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze portions wrapped in plastic wrap.
