Description
A warm and hearty baked breakfast casserole combining sausage, eggs, and cheese, perfect for feeding a crowd or enjoying a special brunch.
Ingredients
- 1 pound beef sausage
- 6 green onions (chopped, divided into white and green parts)
- 1 red bell pepper (chopped)
- 10 large eggs
- 1 1/4 cups heavy cream
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Tabasco (optional)
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese (shredded and divided)
- 1 package (30 ounces) frozen shredded hash browns (thawed)
Instructions
- In a large skillet over medium-high heat, cook the beef sausage until browned. Drain excess grease.
- Add chopped red bell pepper and the white parts of green onions; sauté for 5-7 minutes until tender-crisp. Set aside.
- In a large mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, salt, black pepper, and Tabasco (if using) until smooth.
- Spread thawed hash browns in a 9×13 inch baking dish. Distribute the sausage and vegetable mixture over the hash browns.
- Sprinkle half of the shredded cheese over the sausage layer. Pour the egg mixture evenly over the casserole.
- Top with remaining cheese and green parts of green onions.
- Cover tightly with aluminum foil and bake at 350°F (175°C) for 45 minutes.
- Remove foil and bake for an additional 15-20 minutes, or until set and golden brown.
- Let rest for 10 minutes before serving.
Notes
You can customize the casserole with different vegetables or types of sausage as per your preference.
