Description

A warm and hearty baked breakfast casserole combining sausage, eggs, and cheese, perfect for feeding a crowd or enjoying a special brunch.


Ingredients

  • 1 pound beef sausage
  • 6 green onions (chopped, divided into white and green parts)
  • 1 red bell pepper (chopped)
  • 10 large eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 1-2 teaspoons Tabasco (optional)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese (shredded and divided)
  • 1 package (30 ounces) frozen shredded hash browns (thawed)


Instructions

  1. In a large skillet over medium-high heat, cook the beef sausage until browned. Drain excess grease.
  2. Add chopped red bell pepper and the white parts of green onions; sauté for 5-7 minutes until tender-crisp. Set aside.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, salt, black pepper, and Tabasco (if using) until smooth.
  4. Spread thawed hash browns in a 9×13 inch baking dish. Distribute the sausage and vegetable mixture over the hash browns.
  5. Sprinkle half of the shredded cheese over the sausage layer. Pour the egg mixture evenly over the casserole.
  6. Top with remaining cheese and green parts of green onions.
  7. Cover tightly with aluminum foil and bake at 350°F (175°C) for 45 minutes.
  8. Remove foil and bake for an additional 15-20 minutes, or until set and golden brown.
  9. Let rest for 10 minutes before serving.

Notes

You can customize the casserole with different vegetables or types of sausage as per your preference.
