Satisfying chicken enchiladas that are simple to prepare and perfect for family dinners.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 1/2 cup chopped onions (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, 1/2 cup of cheese, and chopped onions (if using).
- Spread a little enchilada sauce on the bottom of a baking dish.
- Take a tortilla, place a generous amount of the chicken mixture in the center, roll it up, and place it seam-side down in the baking dish.
- Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Serve hot, topped with sour cream and garnished with cilantro if desired.
Notes
For a crispy top, bake uncovered for a few minutes at the end.
