Description

Satisfying chicken enchiladas that are simple to prepare and perfect for family dinners.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup chopped onions (optional)
  • 1/2 cup sour cream (for serving)
  • Chopped cilantro (for garnish, optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, 1/2 cup of cheese, and chopped onions (if using).
  3. Spread a little enchilada sauce on the bottom of a baking dish.
  4. Take a tortilla, place a generous amount of the chicken mixture in the center, roll it up, and place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas and filling.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  8. Serve hot, topped with sour cream and garnished with cilantro if desired.

Notes

For a crispy top, bake uncovered for a few minutes at the end.
