Handheld buns filled with tender shredded chicken, tangy BBQ sauce, and a melty blend of mozzarella and smoked gouda. These bold, smoky mini meals offer a perfect contrast of textures and flavors.
Ingredients
- 12 slider buns, split
- 4 cups shredded cooked chicken
- 1 cup BBQ sauce (plus more optional)
- ¼ cup thinly sliced red onion
- 1 cup grated low-moisture mozzarella
- ½ cup grated smoked gouda
- 2 tbsp chopped cilantro
- 2 tbsp butter
- Black pepper, freshly ground
Instructions
- Preheat oven to 350°F
- Line a 9×13-inch baking dish with parchment paper and spray with non-stick spray
- Place bottom halves of buns in the dish with ½-inch spacing between each
- In a bowl, mix 4 cups chicken with ½ cup BBQ sauce. Divide mixture evenly among buns
- Top each bun with remaining BBQ sauce, mozzarella, gouda, red onion, cilantro, and black
- pepper
- Place top buns over the mix. Cover with foil and bake for 15 minutes
- Melt butter with remaining cilantro. Remove foil, brush buns with mixture, and bake 10 minutes more

- Substitute gluten-free buns as needed
- Smoked gouda imparts a halal-friendly smoky flavor
- Avoid high-moisture cheese to prevent sogginess
- Clarified butter works best for basting if available
