Description

A vibrant, refreshing salad blending juicy watermelon, tangy feta, and crisp cucumbers with a zesty lime dressing. Perfect for summer meals or as a light side dish.


Ingredients

  • Extra-virgin olive oil
  • Lime juice
  • Garlic clove
  • Sea salt
  • Watermelon, cubed
  • English cucumber, diced
  • Red onion, thinly sliced
  • Feta cheese, crumbled
  • Avocado, cubed
  • Herbs, torn
  • Jalapeño/serrano, thinly sliced (optional)


Instructions

  1. Combine olive oil, lime juice, minced garlic, and ¼ teaspoon salt in a small bowl to make dressing.
  2. Cube watermelon, dice cucumber, slice red onion thinly, and prepare jalapeño (if using).
  3. Layer watermelon, cucumber, and red onion on a large platter.
  4. Drizzle half the dressing over the vegetables and toss gently.
  5. Top with feta, avocado cubes, torn herbs, and optional jalapeño slices.
  6. Serve immediately or refrigerate for 10–15 minutes to chill.
